Rogaliki is a staple at every Tomaszewski family lunch or dinner. Whether they are baking fresh in the oven when you arrive or pulled out of the (massive store) in the freezer, rogaliki (with margarine) pairs perfectly with every meal!
My mom said Babcia would ALWAYS make her sandwiches for lunch with homemade rogaliki and kielbasa *which sounds like a dream!* but my mom got so sick of it was so jealous of the wonder bread + cold cut sandwiches the other kids would get. – Maeve

Rogaliki

Yields: 3-4 dozen
Ingredients
7 cups all purpose flour
1 tbsp gluten flour (you can buy this at a bulk food store)
8 tbsp carnation evaporated milk
1/2 cup + 1 tsp sugar (separated)
1/2 tsp salt
2 cups hot water
3 eggs, beaten (1 separated)
1/3 cup vegetable oil
1/2 cup lukewarm water
1 package (8 g) active dry yeast
Directions
1. Sift together the all-purpose and gluten flours. Set aside.
2. Combine milk, 1/2 cup of sugar, and salt. Stir in hot water. Slowly beat in 2 eggs. Add vegetable oil. Set aside.
3. Combine lukewarm water, remaining sugar, and the yeast. Let sit until bubbling.
4. Make a well in the flour mixture. Pour in evaporated milk mixture and yeast mixture. Stir with a wooden spoon. Transfer dough to a wooden cutting board. to knead. Allow dough to double in size before continuing.
5. Roll out individually portioned, uniform rogaliki into a circle. Roll into a crescent shape. Repeat for remaining dough.
6. Place rolls on a greased cookie sheet and allow to proof again.
7. Brush remaining beaten eggs onto each roll.
8. Bake at 350F for 20-25 minutes.
Notes
May need to kneed (pun intended) and proof the dough in two batches as there is so much. Recipe can be doubled.
